The various pigments and colors of fruits and vegetables represent different classes of nutrients that have been shown to provide significant health benefits. For example, the anthoxanthin pigment responsible for the yellow hue in vegetables may help to lower blood pressure and cholesterol and decrease your risk of heart disease.
